Meet the Bartender: Fraser Haig of Revolucion De Cuba

Fraser Haig takes his spot behind the bar at Revolución de Cuba Aberdeen. Fraser’s journey began six years back pulling pints at Badenochs in Elgin, followed by a spell at Slains Castle on Belmont Street. Now he’s bringing creative flair to “Cuba” just down the road.

“I’ve been on a proper sour making binge lately,” Haig tells us, mixing up his signature Aberdeen Cocktail Week creation. His serve builds on a classic sour foundation but gets a distinctive twist with electric-green Midori. “It’s [Midori] has got a brilliant colour and it’s tasty juice.” Haig explained. What you’ll get is a perfect balance of sharp citrus, silky egg white and that unmistakable melon sweetness.

Fraser reckons we’re heading straight for disco revival territory: “I think we’re headed back to disco, colourful fun drinks are always the way to go and with this generation drinking less it seems like low abv fun colourful serves are the future.” So expect paper umbrellas, outrageous colours and proper flavour without the hangover in your upcoming serves.

When he’s not on shift, there’s one Aberdeen Cocktail Week creation he’s desperate to try: “Definitely going for Clearly Mint [by Corrie at The Spiritualist] – because it’s, well, clearly mint.”
